Fresh Rolls and My Famous Peanut Sauce

All I can say is YUM!

My veggie-packed fresh rolls with my spicy peanut sauce are an always-requested menu item!

We have two types of fresh roll options on the menu, this one is the original and we now offer a smaller tighter handroll, just as good but less messy!

Fresh Rolls with Peanut Sauce

This veggie-packed appetizer includes my spicy peanut sauce recipe that will make you beg for more!

Ingredients

• For Rolls:
• 12 Spring roll rice paper wrappers
• 1 Avocado, pitted and sliced
• 1/2 cup Carrots, cut thin and long
• 1/2 cup Cucumber, cut thin and long
• 1/2 cup Cilantro, sprigs
• 1/4 cup Mint, sprigs
• 12 Leafy green lettuce, leaves
• 1 Red Bell Pepper
• 1/2 cup Red cabbage
• For Peanut Sauce:
• 1/2 cup salted creamy peanut butter
• 2-3 Tbsp. Coconut Aminos or Soy Sauce
• 1 Tbsp. Chili garlic sauce
• 1 Tbsp. Garlic, minced
• 1 Tbsp. Fresh ginger, micro-planed
• 2-3 Tbsp. lime juice
• 1/4 cup water (to thin if necessary)

Instructions

1. For Rolls:
2. Prepare and cut all the ingredients/fillings.
3. I like to use a pie plate or flat pan to soak my rice paper. Fill the container with luke-warm water. Make sure you have all of your fillings nearby and ready to go as once you start to soak your rice paper you will need to move quickly.
4. Soak one rice paper at a time until it is soft and see through, about 1-2 minutes. Carefully remove it from water, be careful to not let it fold in on itself, and place on work area.
5. Layer your fillings near one side of the rice paper, using the leaf lettuce as the base. Once it is full, fold the ends in tightly and roll as tight as possible. Don't worry, your technique will improve after your first one!
6. For Peanut Sauce:
7. To a medium mixing bowl add all the sauce ingredients except the water and whisk to combine. Add water a little at a time, to thin if necessary. Taste and adjust seasonings as needed.
