Recipe Of The Week

Roasted Poblano Vegan Enchiladas

My daughter was here this week and when my girls pay a visit they usually pick a night to make us dinner. In honor of Dave’s love of all things spicy Amanda chose these vegan enchiladas, and boy were they delish! These enchiladas have so much flavor from the smoked peppers. You could easily add chicken to this recipe, sub the vegan yogurt for sour cream and use real cream cheese as well. Or you could try this vegan version and see how great you feel! Dave gave this one 5 ⭐️’s.

Roasted Poblano Vegan Enchiladas

Ingredients

• 1 poblano pepper
• 1 jalapeño
• 2 tbsp olive oil
• 1 red onion roughly chopped
• 1 tsp cumin
• 1 tsp oregano
• 1/2 tsp salt
• 1/2 tsp pepper
• 1 clove garlic
• 1/2 tsp smoked paprika
• 2 limes, juiced
• 8 oz. vegan cream cheese (kite hill is my fav)
• 8 oz. plain vegan yogurt ( I used oatly)
• 1/4 c. cilantro, plus more for garnish
• 1.5 cups frozen corn, thawed
• 1 15 oz can pinto beans, drained and rinsed
• 1 15 oz can green enchilada sauce
• 8 corn tortillas
• 2 avocados
• hot sauce for serving

Instructions

1. Place the poblano and jalapeño on a baking sheet. Turn the oven to broil and roast on top rack fo 10 minutes - flip halfway. You want both sides charred. Remove from the oven and let rest under a towel to steam for 5 minutes. Remove the towel and allow the peppers to cool, then remove the skins and stem and roughly chop.
2. While the peppers are cooking, heat 1 tbsp oil in a pan over medium heat. Add onion, cumin, oregano, salt and pepper. Cook for 5 minutes or until the onions start to soften. Set aside. 
3. Preheat oven to 350 degrees.
4. Add the poblano, jalapeño, onions, garlic, paprika, remaining olive oil, and juice from 1 lime to food processor or high speed blender. Blend until combined.
5. Next, add the mixture to a bowl and combine with cream cheese, 4 oz of yogurt, cilantro, corn and pinto beans. Mix until combined and adjust seasoning as needed.
6. Wrap tortillas in a damp paper towel and place in microwave for 30-60 seconds, or until warmed through. Add 1/2 cup of enchilada sauce to bottom of baking dish. Spoon equal amounts into each tortilla, wrap and place seam side down in baking dish. Top with the remaining enchilada sauce and place in oven, uncovered, for 20-30 minutes, or until hot and bubbly.
7. While the enchiladas cook, combine the remaining yogurt and lime juice in a bowl, stir and set aside. 
8. Remove the enchiladas from oven and top with yogurt sauce, hot sauce, avocado slices and cilantro.
9. *If you are sensitive to heat you can remove the seeds from the peppers.
